Chicken pilaf
Ingredients/Components
- salt - 1 tsp
- vegetable oil - 2 Tbsp
- seedless raisins - 1/3 c
- ground ginger - 1 tsp
- soy sauce - 2 Tbsp
- chicken broth - 1 item
- onion, chopped - 1 c
- cloves garlic, crushed - 2 item
- black pepper - 1/4 tsp
- sherry - 2 Tbsp
- uncooked rice - 1 c
- , skinned, boned and cut in cubes - 1 chicken
- can apricots, drained reserve syrup - 1 oz
How to make chicken pilaf:
Cook onion and garlic in oil until tender, but not brown. Add chicken; cook 2 minutes longer. Stir in rice, raisins and seasonings. Mix apricot syrup, soy sauce and sherry with enough broth to make 2 cups. Stir into rice mixture. Bring to a boil. Stir once, reduce heat, cover and simmer for 25 minutes or until rice is tender and liquid is absorbed. Add apricot halves. Heat thoroughly.
