Ingredients/Components
- milk - 1/2 c
- butter or margarine - 2 Tbsp
- flour - 3 Tbsp
- Dijon mustard - 1 tsp
- chicken broth - 1 c
- salt and pepper to taste - 1 item
- oregano - 1 tsp
- onion, finely chopped - 1 item
- juice of 1/2 lemon
- cooked chicken, cut in small pieces - 3 c
- slices hot toast or 4 English muffins, halved and toasted - 8 item
How to make chicken hash:
Heat butter in saucepan and saute onion about 3 minutes until softened. Stir in flour. Add broth and milk gradually, stirring with wire whisk to form smooth sauce.Season with mustard, oregano, salt and pepper. Stir in lemon juice. Add chicken. Continue cooking over moderate heat 5 minutes, until chicken is hot. Divide hot toast or muffin halves among 4 individual plates and spoon piping hot chicken mixture on top. Serves 4.
