Chicken fiesta
Ingredients/Components
- can cream of chicken soup - 1 item
- can cream of mushroom soup - 1 item
- grated Cheddar cheese - 1 c
- small onion, chopped - 1 item
- finely diced celery - 1 c
- chopped bell pepper - 1 c
- bunch green onions, chopped with tops - 1 item
- Creole seasoning - 1 item
- can Mexicorn - 1 item
- ground sausage - 1 lb
- Rice-A-Roni - 1 pkg
- choice chicken pieces I use breast tenders - 1 1
How to make chicken fiesta:
Sprinkle chicken tenders (or any part of chicken) with Creole seasoning. Brown in 2 tablespoons butter. Remove and set aside. In same skillet, brown sausage and vegetables until vegetables are tender. Cook Rice-A-Roni according to directions. Combine the cooked Rice-A-Roni and sausage mixture. Add the Mexicorn and the soups. Stir in 1 cup of cheese. Pour this mixture into a casserole dish. Place the chicken pieces on top of the casserole.
