Chicken fettuccine
Ingredients/Components
- pinch of salt - 1 item
- garlic powder - 1/4 tsp
- chopped onion - 1/2 c
- sliced zucchini - 2 c
- pepper to taste - 1 item
- minced garlic - 1 tsp
- dried basil - 1/4 tsp
- fat-free chicken broth - 3 Tbsp
- hot cooked fettuccine - 4 c
- skimmed evaporated milk - 3/4 c
- Alpine Lace or Weight Watchers fat-free Parmesan cheese - 1/4 c
- boned, skinned breasts, cut in bite sized pieces - 1 lb
- stems and pieces mushrooms, drained - 8 oz
How to make chicken fettuccine:
Spray a large nonstick frying pan with nonfat cooking spray. Saute the onion and garlic in chicken broth. Add chicken and saute about 7 minutes or until the chicken is cooked. Add the zucchini and mushrooms. Saute until tender. Add the fettuccine and milk. Sprinkle the cheese on top and mix well. Yields 6 to 8 servings.
