Ingredients/Components
- can Cream of Chicken soup - 1 item
- Corn Tortillas - 1 doz
- Monterey Jack Cheese, shredded - 1 item
- Enchilada Sauce - 1 qt
- sized Chicken, whole - 1 Med
- can Pitted Olives - 1 item
How to make chicken enchilada casserole:
Boil the Chicken, then remove all bones and skin. Tear meat into chunks.In a bowl, mix the chicken, soup, and pepper to taste.
Fry the tortillas in oil, then dip in the enchilada sauce.
Place in a single layer; 6 fried, dipped tortillas in a casserole dish. Next, top with 1/2 of the chicken soup mixture. Then, top with shredded Jack cheese. Repeat the layers in the same order with the remaining ingredients and top with olives.
Bake in a pre-heated 350° oven approximately 25 minutes.
