Ingredients/Components

  • sour cream - 16 oz
  • shredded Cheddar cheese - 1 lb
  • onion, diced - 1/2 item
  • cans cream of chicken soup - 2 item
  • diced green chiles - 4 oz
  • salt, pepper and garlic to taste - 1 item
  • large tortillas - 1 pkg
  • whole chicken, boiled and cut into small pieces - 1 item

How to make chicken enchilada casserole:

In large saucepan, mix all ingredients except only 1/2 the cheese. Bring to a boil, stirring constantly until everything is well blended. Begin layering mixture, tortillas, mixture, tortillas and mixture, ending with mixture. Top with remaining cheese. Bake at 350° for 30 minutes.

I use six serving spoons of mixture and two large tortillas for each layer for four layers.
