Chicken enchilada casserole
Ingredients/Components
- sour cream - 16 oz
- shredded Cheddar cheese - 1 lb
- onion, diced - 1/2 item
- cans cream of chicken soup - 2 item
- diced green chiles - 4 oz
- salt, pepper and garlic to taste - 1 item
- large tortillas - 1 pkg
- whole chicken, boiled and cut into small pieces - 1 item
How to make chicken enchilada casserole:
In large saucepan, mix all ingredients except only 1/2 the cheese. Bring to a boil, stirring constantly until everything is well blended. Begin layering mixture, tortillas, mixture, tortillas and mixture, ending with mixture. Top with remaining cheese. Bake at 350° for 30 minutes.I use six serving spoons of mixture and two large tortillas for each layer for four layers.
