Ingredients/Components

  • salt
  • water - 3 qt
  • chopped celery
  • small onion, chopped - 1 item
  • black pepper - 1/2 tsp
  • noodles - 3/4 c
  • hard-boiled eggs - 2 item
  • stewing chicken, cut up - 4 lb
  • alphabet noodles - 1/4 c
  • corn fresh or frozen - 1 qt

How to make chicken corn soup:

In a large kettle cover the cut up chicken with water; add salt and pepper. Cook until tender. Remove chicken, strain broth and remove excess fat, if desired.

In a large kettle cook the noodles and celery in the strained chicken broth. Add onion. Add the corn and continue to cook for 20 minutes. Add chicken (cut in small pieces) and heat thoroughly. May be garnished with parsley.
