  • lemon juice - 3 Tbsp
  • mayonnaise - 3/4 pt
  • crushed corn flakes
  • stick oleo - 1/3 item
  • celery, chopped - 1 c
  • rice - 1 c
  • cans cream of chicken soup - 2 item
  • broth - 2 c
  • fryer - 1 item

How to make chicken casserole:

Boil fryer in salted water. Bone and cut up fryer. Reserve 2 cups broth. Cook celery and rice in broth until broth is absorbed. Add soup and mayonnaise. Add chicken. Put in 8 x 10-inch casserole dish. Top with crushed corn flakes and oleo. Bake 1 hour at 325°.

May add chopped hard-boiled eggs or sliced water chestnuts or almonds, if desired.
