Ingredients/Components

  • flour - 1 c
  • parsley - 1 Tbsp
  • bunch green onions, chopped - 1 item
  • large onion - 1 item
  • salt, black pepper and red pepper to taste - 1 item
  • high grade oil - 1/2 c
  • When hot, stir in flour and continue to stir until a deep brown color, about 30 to 45 minutes
  • bell pepper medium sized, chopped - 1 item
  • 1/2 pork smoked sausages, cut in bite sized pieces - 1 item

How to make chicken and sausage gumbo:

Put oil in thick iron pot over medium heat. When hot, stir in flour and continue to stir until a deep brown color, about 30 to 45 minutes.Gumbo:1 fryer, cut into serving pieces1 large onion1 bell pepper (medium sized), chopped1 bunch green onions, chopped1 Tbsp. parsley1 1/2 pork smoked sausages, cut in bite sized pieces salt, black pepper and red pepper to taste Saute onion and pepper in roux until wilted. Transfer to big soup pot and add 1 1/2 quarts water and the chicken. Cook until the chicken is tender. Remove chicken from gumbo and debone. Return to pot and add sausages, parsley and green onions. Cook about 15 to 20 minutes. You can add more seasoning and water if necessary. Serve over cooked rice. Gumbo file may be sprinkled over the top as each person wishes.
