Ingredients/Components

  • milk - 1/4 c
  • salt - 1/4 tsp
  • melted margarine - 2 Tbsp
  • pepper - 1/8 tsp
  • chopped onion - 3/4 c
  • chopped celery - 1 c
  • parsley flakes - 2 tsp
  • chicken broth - 1/2 c
  • mayonnaise - 2/3 c
  • can cream of mushroom soup - 1 item
  • cooked rice - 3 c
  • celery salt - 1/4 tsp
  • can English peas - 1 item
  • whole chicken, cooked, deboned and cut up - 1 item

How to make chicken and rice casserole:

Saute celery and onion in margarine. Combine rice, celery, onion, margarine, parsley flakes, salt, celery salt, pepper and peas with chicken broth. Place in 3-quart baking dish. Place chicken over this. Combine soup, mayonnaise and milk. Spread over chicken. Bake at 350° for 45 minutes.
