Cheese enchiladas
Ingredients/Components
- sour cream - 8 oz
- grated Cheddar cheese - 1/2 c
- corn tortillas - 12 item
- can Ro-Tel - 1 item
- Velveeta - 1 lb
- small can chopped ripe olives - 1 item
- Filling:1 small block Monterey Jack cheese, grated
How to make cheese enchiladas:
Filling:1 small block Monterey Jack cheese, grated8 oz. sour cream1 small can chopped ripe olives1/2 c. grated Cheddar cheese Mix all filling ingredients together. To soften tortillas, fry very quickly in hot oil and drain on paper towel. Put about 2 tablespoons filling in each and fold over. Place, seam side down, in baking dish. Melt 1 pound Velveeta with 1 can Ro-Tel. Pour over enchiladas. Bake until bubbly.Recipe categories: Cheese, Ground beef, Beef.
