  • graham cracker crumbs - 2 c
  • sugar - 2 Tbsp
  • vanilla - 2 tsp
  • pkg - 3 oz
  • sour cream
  • melted butter - 1/4 c

How to make cheese cake:

Filling:4 eggs1 c. sugar3 (8 oz.) pkg. cream cheese2 tsp. vanilla Topping:8 oz. sour cream2 Tbsp. sugar1 tsp. vanilla Combine crust ingredients in a small bowl using a fork. When combined, gently pat the mixture into an 8-inch spring-form pan, making sure to evenly spread the mixture on the bottom and up the sides of the dish. Set aside.

For the filling, combine the cream cheese and sugar in a large mixing bowl. With an electric mixer (if possible) mix very well, until the cheese is light and fluffy. Add the eggs, one at a time, mixing well after each addition. After all of the eggs have been added, add the vanilla. Mix very well. Pour the filling mixture into the crust. Bake at 350° for 40 to 45 minutes or until the center is set. Let cool completely.

For the topping, combine all of the ingredients in a small bowl. Pour the topping over the cooled cheese cake. Bake in a preheated 475° oven about 4 minutes, until the topping is set. (It should not brown.) Let cool.

For best results, let the cheese cake cool to room temperature, then chill in the refrigerator for several hours before serving.
