Cashew chicken
Ingredients/Components
- cornstarch - 4 oz
- egg whites - 8 oz
- soy sauce - 1 oz
- cashews - 1 lb
- sherry - 1 oz
- fresh ginger, chopped fine - 1 tsp
- cherry tomatoes - 8 item
- cauliflower florets - 1 c
- broccoli florets - 1 c
- chicken tenderloin, cut into strips - 1 lb
- snow peas, cleaned - 1 c
- bok choy, sliced thin - 1 c
- green pepper, sliced julienne - 1 c
- scallions, sliced 1-inch - 1 c
- hoisin - 1 oz
- fresh, crushed garlic - 1 tsp
How to make cashew chicken:
Dip chicken in egg whites and cornstarch. Saute chicken. Add vegetables, sherry, soy sauce, hoisin, garlic and ginger. Add snow peas, cherry tomatoes, bok choy and cashews. Total cooking time is about 10 minutes. Yields 4 servings.Recipe categories: Chicken, Poultry, Meat.
