Carrot ring
Ingredients/Components
- milk - 1 c
- salt - 1 tsp
- butter - 2 Tbsp
- egg yolks - 3 item
- egg whites, stiffly beaten - 3 item
- pepper - 1/8 tsp
- finely chopped onion - 1/4 c
- mashed, cooked carrots - 2 c
- dry bread or cracker crumbs - 1/2 c
- dash of Worcestershire sauce or paprika if desired - 1 item
How to make carrot ring:
Mix ingredients. Pour into a greased 1 1/2-quart ring mold. Set in pan of hot water 1-inch deep. Bake at 350° for 40 to 45 minutes. Serves 8 to 10. Fill center with cooked peas and sauteed mushrooms. Serve with egg sauce.Egg sauce: Make regular or medium white sauce and carefully stir in 2 diced, hard-boiled eggs. Season.
