  • sugar - 1 c
  • cinnamon - 1 tsp
  • salt - 3/4 tsp
  • flour - 1 c
  • nutmeg - 1 tsp
  • soda - 1 tsp
  • raisins - 2 c
  • shortening, melted - 1/2 c
  • uncooked carrots, shredded - 1 c
  • uncooked potatoes, shredded - 1 c

How to make carrot pudding:

Sift flour; measure and sift spices, salt and soda. Add raisins. Combine carrots, potatoes, shortening and sugar. Add dry ingredients and raisins; mix thoroughly. Fill well oiled 1-pound coffee cans 2/3 full. Steam 2 1/2 hours. Makes 6 servings.
