Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- salt - 3/4 tsp
- flour - 1 c
- nutmeg - 1 tsp
- soda - 1 tsp
- raisins - 2 c
- shortening, melted - 1/2 c
- uncooked carrots, shredded - 1 c
- uncooked potatoes, shredded - 1 c
How to make carrot pudding:
Sift flour; measure and sift spices, salt and soda. Add raisins. Combine carrots, potatoes, shortening and sugar. Add dry ingredients and raisins; mix thoroughly. Fill well oiled 1-pound coffee cans 2/3 full. Steam 2 1/2 hours. Makes 6 servings.Recipe categories: Egg, Side dish, Carrots.
