- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1 tsp
- flour - 2 c
- grated carrots - 3 c
- baking soda - 2 tsp
- melted butter
- vegetable oil
- chopped nuts optional - 1 c
- box confectioners sugar - 1 lb
How to make carrot cake:
Icing:1/2 c. melted butter1 tsp. vanilla1 (8 oz.) pkg. cream cheese, softened1 (1 lb.) box confectioners sugar Sift together sugar, flour, baking soda, salt and cinnamon. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly. Pour into a floured and greased 13 x 9 x 2-inch cake pan. Bake in a 350° oven for 45 to 60 minutes. Cool in pan. Spread with Cream Cheese Icing.Icing: Combine butter, cream cheese and vanilla, mixing well. Gradually add confectioners sugar, beating until smooth. Spread on cooled cake.
