  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • flour - 2 c
  • stick margarine - 1 item
  • soda - 2 tsp
  • confectioners sugar - 1 lb
  • chopped dates - 3/4 c
  • pecans - 1 c
  • Wesson oil
  • Add oil and blend well
  • grated coarse carrots - 3 c

How to make carrot cake:

Sift dry ingredients into large bowl. Add oil and blend well. Add eggs and carrots and beat. Bake in 3 layers or 1 tube pan at 350° for 30 minutes (55 minutes for tube pan).Icing:1 (8 oz.) pkg. cream cheese, softened1 stick margarine1 lb. confect
