Ingredients/Components

  • sugar - 2 c
  • oil
  • eggs - 4 item
  • flour - 3 c
  • cinnamon - 2 tsp
  • salt - 1/2 tsp
  • soda - 2 tsp
  • grated orange rind - 2 tsp
  • vanilla - 2 tsp
  • grated carrots - 3 c
  • crushed pineapple 10 oz - 1 c
  • chopped nuts - 1 c
  • can Angel Flake coconut - 1 item
  • Add rest of the ingredients in order
  • stick margarine - 1 item
  • confectioners sugar - 2 c
  • pecans - 1 c

How to make carrot cake:

Cream sugar, oil and eggs. Add rest of the ingredients in order. Bake in 3 loaf pans for about 30 minutes or tube pan for 1 1/2 hours. Bake at 325°.Frosting:1 (8 oz.) pkg. cream cheese1 stick margarine2 c. confectioners sugar1 1/2 tsp. vanilla1 c. pecans Blend together and frost cake. Refrigerate cake after frosting.
