Ingredients/Components
- sugar - 2 c
- oil
- eggs - 4 item
- flour - 3 c
- cinnamon - 2 tsp
- salt - 1/2 tsp
- soda - 2 tsp
- grated orange rind - 2 tsp
- vanilla - 2 tsp
- grated carrots - 3 c
- crushed pineapple 10 oz - 1 c
- chopped nuts - 1 c
- can Angel Flake coconut - 1 item
- Add rest of the ingredients in order
- stick margarine - 1 item
- confectioners sugar - 2 c
- pecans - 1 c
How to make carrot cake:
Cream sugar, oil and eggs. Add rest of the ingredients in order. Bake in 3 loaf pans for about 30 minutes or tube pan for 1 1/2 hours. Bake at 325°.Frosting:1 (8 oz.) pkg. cream cheese1 stick margarine2 c. confectioners sugar1 1/2 tsp. vanilla1 c. pecans Blend together and frost cake.
