sugar - 2 c
oil
eggs - 4 item
flour - 3 c
cinnamon - 2 tsp
salt - 1/2 tsp
soda - 2 tsp
grated orange rind - 2 tsp
vanilla - 2 tsp
grated carrots - 3 c
crushed pineapple 10 oz - 1 c
chopped nuts - 1 c
can Angel Flake coconut - 1 item
Add rest of the ingredients in order
stick margarine - 1 item
confectioners sugar - 2 c
pecans - 1 c

How to make carrot cake:

Cream sugar, oil and eggs. Add rest of the ingredients in order. Bake in 3 loaf pans for about 30 minutes or tube pan for 1 1/2 hours. Bake at 325°.Frosting:1 (8 oz.) pkg. cream cheese1 stick margarine2 c. confectioners sugar1 1/2 tsp. vanilla1 c. pecans Blend together and frost cake. Refrigerate cake after frosting.
