- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt - 2 tsp
- chopped nuts
- flour
- oil
- soda - 2 tsp
- grated carrots - 3 c
- confectioners sugar - 1 lb
- margarine - 1/4 c
- Combine sugar, oil and eggs
How to make carrot cake:
Preheat oven to 300°. Combine sugar, oil and eggs. Beat at medium speed for 2 minutes. Add dry ingredients and beat at low speed for 1 minute. Stir in grated carrots and nuts. Spread in a greased and floured 9 x 13-inch pan. Bake about 1 hour or until cake tests done with a toothpick. Frost with Cream Cheese Frosting.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1/4 c. margarine2 tsp. vanilla1 lb. confectioners sugar Let cream cheese and margarine warm to room temperature. Cream thoroughly and add vanilla. Gradually beat in sugar. Thicken by adding sugar. Thin by adding milk.Recipe categories: Desserts, Cakes, Carrots.
