  • sugar - 2 c
  • cinnamon - 4 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • oil
  • soda - 1 tsp
  • nuts - 1 c
  • shredded carrots - 2 c
  • finely chopped nuts - 1/2 c
  • Sift flour and dry ingredients together, then add to oil mixture
  • frozen orange juice or 1 cut fresh, warm - 1/2 c

How to make carrot cake:

Mix oil, sugar and eggs. Sift flour and dry ingredients together, then add to oil mixture. Add carrots and nuts. Bake 1 hour at 350° in 2 pans, size 9-inch or 1 tube pan.Topping:1/2 c. sugar1/2 c. frozen orange juice or 1 cut fresh, warm1/2 c. finely chopped nuts Pour over cake while cake is hot.
