  • eggs - 3 item
  • vanilla - 1 tsp

  • salt - 1/2 tsp
  • confectioners sugar - 3 c
  • baking soda - 1 tsp
  • vegetable oil
  • all-purpose flour - 2 c
  • shredded coconut - 1 c
  • margarine, softened - 6 Tbsp
  • ground cinnamon - 2 tsp
  • chopped nuts, divided - 1 c
  • finely grated carrots - 2 c
  • well drained pineapple - 1 c

How to make carrot cake:

Frosting:2 (3 oz.) pkg. cream cheese, softened3 c. confectioners sugar6 Tbsp. margarine, softened1 tsp. vanilla In mixing bowl, combine dry ingredients. Add eggs, oil, carrots and vanilla. Beat until combined. Stir in pineapple, coconut and 1/2 cup nuts. Pour into greased 9 x 13 x 2-inch baking pan. Bake at 350° for 50 to 60 minutes or until cake tests done. Cool.

Combine frosting ingredients in a small bowl. Mix well until blended. Frost cooled cake. Sprinkle with remaining nuts. Store in refrigerator. Makes 12 to 16 servings.
