Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- chopped pecans - 1 c

- vanilla extract - 1 tsp
- salt - 1/2 tsp
- confectioners sugar - 3 c
- baking soda - 1 tsp
- vegetable oil
- all-purpose flour - 2 c
- shredded coconut - 1 c
- oleo, softened - 6 Tbsp
- ground cinnamon - 2 tsp
- finely grated carrots - 2 c
- well drained crushed pineapple - 1 c
How to make carrot cake:
Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese, softened3 c. confectioners sugar6 Tbsp. oleo, softened1 c. chopped pecans1 tsp. vanilla extract In mixing bowl, combine dry ingredients. Add eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and pecans. Pour into 3 greased 9-inch baking pans and bake about 30 minutes at 350° or until done.Combine frosting ingredients in mixing bowl; mix until well blended. Frost cake while warm.
