  • sugar
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • oil
  • soda - 2 tsp
  • flaked coconut - 1 c
  • crushed pineapple - 1 c
  • finely grated carrots - 2 c

How to make carrot cake:

Beat eggs, sugar and oil well. Add carrots, pineapple and coconut. Sift dry ingredients together and add with nuts and vanilla. Mix well. Bake in ungreased rectangular pan at 350° for 50 minutes. Turn oven off, but do not remove cake for 10 minutes. Good frosted or un-!
