  • butter, softened - 1/2 c
  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • pkg
  • salt - 1 tsp
  • flour - 2 c
  • coconut - 1 c
  • grated carrots - 2 c
  • baking soda - 1 tsp
  • vegetable oil
  • chopped walnuts - 1 c
  • sifted powdered sugar - 4 c
  • crushed pineapple, drained - 1 c

How to make carrot cake:

Frosting:1 (8 oz.) pkg. cream cheese, softened1/2 c. butter, softened2 tsp. vanilla4 c. sifted powdered sugar Preheat oven to 350°. Sift flour, soda, cinnamon and salt. Set aside. Beat sugar, oil and eggs until well blended. Gradually add flour mixture. Fold in carrots, pineapple, coconut, walnuts and vanilla. Pour into pan. Bake 1 hour. Cool.

For frosting, beat cream cheese, butter and vanilla. Gradually add powdered sugar, beating until smooth. Frost cake. Use a 13 x 9-inch buttered, floured pan.
