Ingredients/Components

  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped walnuts - 1/2 c
  • warm water - 1/2 c
  • honey - 2 Tbsp
  • whole wheat flour
  • grated orange rind
  • yeast - 2 Tbsp
  • soy milk - 1/2 c
  • maple flavoring - 1 tsp
  • finely grated carrots
  • cashew meal - 1/2 c
  • coconut, unsweetened macaroon - 1/4 c

How to make carrot cake:

Dissolve first 3 ingredients in large bowl and let stand until bubbles form. Blend and add to yeast mixture the soy milk and cashew meal. Mix in remaining ingredients except whole wheat flour. Stir in flour. Pour into "Pammed" 7 1/2 x 11 1/2-inch baking pan. Let stand for 30 minutes. Preheat oven to 350°. Bake for 45 to 60 minutes. For Bundt pan, use 1 1/2 recipes.
