Tofu cheesecake
Ingredients/Components
- salt - 1/2 tsp
- water - 3 5
- unbleached flour - 1/4 c
- lemon flavoring - 1 tsp
- honey - 1/4 c
- lemon rind - 1/2 Tbsp
- water or more - 1/4 c
- mild honey - 2/3 c
- zwieback, ground - 2 c
- nut meal almond
- Dampen hands
How to make tofu cheesecake:
Add and mix:1/2 c. nut meal (almond)1/4 c. honey3 to 5 Tbsp. water Save 1/4 cup for topping. Dampen hands. Press remainder of crust mixture into pie plate. Bake at 425° for 3 to 5 minutes. (Bake only long enough for crust to hold form.) Cool.Filling:1 lb. tofu2/3 c. mild honey1/4 c. unbleached flour1 tsp. lemon flavoring1/2 Tbsp. lemon rind1/2 tsp. salt1/4 c. water or more Blend all ingredients except flour. This will be very stiff, so start and stop blender very often. Stir in flour and spoon into baked 8-inch or 9-inch pie crust. Bake at 350° for about 20 minutes. Sprinkle 1/4 cup topping on after baking. Cool before serving. Top with blueberries or sliced strawberries. Serves 6 to 8.Recipe categories: Cheesecake, Desserts, Soy/tofu.
