Ingredients/Components
- sugar
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- butter - 1/4 c
- grated carrots - 3 c
- confectioners sugar - 2 c
- baking powder - 2 tsp
- baking soda - 2 tsp
- vegetable oil
- raisins - 1/2 c
- Mix until well blended, 3 to 4 minutes
How to make carrot cake:
Combine flour, sugar, powder, soda, salt and cinnamon in bowl. Mix until well blended, 3 to 4 minutes. Add oil while mixing. Add carrots and eggs one at a time, mixing well after each. Stir in nuts and vanilla. Mix well. Fold in raisins. Pour into greased and floured 9 x 13-inch pan. Bake in preheated oven at 350° for 50 to 60 minutes. Cool in pan. Frost with Cream Cheese Frosting.Cream Cheese Frosting:4 oz. cream cheese1/4 c. butter2 c. confectioners sugar Combine cheese and butter in small bowl. Beat until light and fluffy. Add confectioners sugar and beat to blend. Use additional confectioners sugar if necessary. Spread on top of carrot cake.Recipe categories: Desserts, Cakes, Carrots.
