  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 4 item
  • pkg - 1 oz
  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • butter
  • confectioners sugar - 1 pkg
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • chopped walnuts - 1 c
  • sifted flour - 2 c
  • salad oil
  • finely grated carrots - 2 c

How to make carrot cake:

Nut Icing:1/2 c. butter1 (8 oz.) pkg. cream cheese1 pkg. confectioners sugar1 tsp. vanilla extract1 c. chopped walnuts Beat salad oil and sugar. Add one egg at a time. Gradually add dry ingredients, mixing well. Add carrots; mix well. Grease and flour three 8-inch layer cake pans. Bake in a moderate oven (350°) for 50 to 60 minutes. Remove from pans and cool on racks. Frost with icing.

Icing: Combine butter and cream cheese; beat until light. Gradually add while beating the confectioners sugar. Add vanilla and walnuts. Mix well.
