Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- pkg - 1 oz
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- butter
- confectioners sugar - 1 pkg
- baking powder - 1 tsp
- baking soda - 1 tsp
- chopped walnuts - 1 c
- sifted flour - 2 c
- salad oil
- finely grated carrots - 2 c
How to make carrot cake:
Nut Icing:1/2 c. butter1 (8 oz.) pkg. cream cheese1 pkg. confectioners sugar1 tsp. vanilla extract1 c. chopped walnuts Beat salad oil and sugar. Add one egg at a time. Gradually add dry ingredients, mixing well. Add carrots; mix well. Grease and flour three 8-inch layer cake pans. Bake in a moderate oven (350°) for 50 to 60 minutes. Remove from pans and cool on racks. Frost with icing.Icing: Combine butter and cream cheese; beat until light. Gradually add while beating the confectioners sugar. Add vanilla and walnuts. Mix well.
