  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt
  • flour - 2 c
  • butter - 4 Tbsp
  • coconut - 1 c
  • confectioners sugar
  • baking powder - 2 tsp
  • baking soda
  • chopped walnuts - 1/2 c
  • shredded carrots - 2 c
  • salad oil
  • crushed pineapple, drained - 1 c
  • Stir in walnuts and coconut

How to make carrot cake:

Mix together flour, baking powder, baking soda, salt, cinnamon and sugar. Stir in walnuts and coconut. In another bowl, combine oil and eggs and beat 1 minute. Stir in carrots and pineapple. Combine the two mixtures, wet and dry. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 45 minutes.Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese, softened4 Tbsp. butter4 1/2 c. confectioners sugar2 tsp. vanilla Blend cream cheese and butter. Add sugar and vanilla. Blend until smooth and creamy. Spread on cooled cake.
