Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt
- flour - 2 c
- butter - 4 Tbsp
- coconut - 1 c
- confectioners sugar
- baking powder - 2 tsp
- baking soda
- chopped walnuts - 1/2 c
- shredded carrots - 2 c
- salad oil
- crushed pineapple, drained - 1 c
- Stir in walnuts and coconut
How to make carrot cake:
Mix together flour, baking powder, baking soda, salt, cinnamon and sugar. Stir in walnuts and coconut. In another bowl, combine oil and eggs and beat 1 minute. Stir in carrots and pineapple. Combine the two mixtures, wet and dry. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 45 minutes.Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese, softened4 Tbsp. butter4 1/2 c. confectioners sugar2 tsp. vanilla Blend cream cheese and butter. Add sugar and vanilla.
