Ingredients/Components
- granulated sugar - 1 c
- confectioners sugar
- baking powder - 1 Tbsp
- all-purpose flour - 2 c
- large eggs - 3 item
- chopped walnuts - 1/2 c
- ground cinnamon - 2 tsp
- unsweetened applesauce - 1 c
- finely shredded carrots - 4 c
- nonfat yogurt - 1/2 c
- baking soda and salt - 1/2 tsp
- tub light cream cheese - 1 item
How to make carrot cake:
Frosting:2 c. confectioners sugar1 tub light cream cheese1/2 c. chopped walnuts Heat oven to 350°. Lightly spray a 13 x 9 x 2-inch baking pan with vegetable cooking spray. Mix flour, baking powder, cinnamon, baking soda and salt in a bowl. Mix sugar and eggs in a large bowl with a spoon. Stir in applesauce and oil, then flour mixture until blended. Stir in carrots. Spread in prepared pan. Bake for 35 to 40 minutes, until a pick inserted near center comes out clean. Cool completely in pan on a wire rack.Frosting: Beat confectioners sugar and cream cheese in a small bowl with electric mixer until smooth. Spread on top of cooled cake. Sprinkle with nuts.
