- packed light brown sugar
- walnuts, chopped - 1 c
- ground cloves - 1/2 tsp
- ground cinnamon - 1/2 tsp
- orange juice - 2 tsp
- unsalted butter, softened - 1/2 c
- grated nutmeg - 3/4 tsp
- grated orange zest - 1 Tbsp
- finely chopped crystallized ginger - 1 Tbsp
- shredded peeled carrots - 3 c
