Ingredients/Components

  • sugar - 2 c
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • salt - 3/4 tsp
  • grated carrots - 2 c
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • all-purpose flour - 3 c
  • can crushed pineapple, drained - 1 oz
  • ground cinnamon - 1 tsp

How to make carrot bread:

Combine first 5 ingredients; stir in pecans. Combine remaining ingredients. Add to flour mixture, stirring just until dry ingredients are moistened.

Spoon batter into two greased and floured, 8 1/2 x 4 1/2 x 3-inch loaf pans. Bake at 350° for one hour or until pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool on wire racks. Yields 2 loaves.
