Carrot bread
Ingredients/Components
- sugar - 2 c
- vanilla - 2 tsp
- chopped pecans - 1 c
- salt - 3/4 tsp
- grated carrots - 2 c
- eggs, beaten - 3 item
- baking soda - 1 tsp
- vegetable oil - 1 c
- all-purpose flour - 3 c
- can crushed pineapple, drained - 1 oz
- ground cinnamon - 1 tsp
How to make carrot bread:
Combine first 5 ingredients; stir in pecans. Combine remaining ingredients. Add to flour mixture, stirring just until dry ingredients are moistened.Spoon batter into two greased and floured, 8 1/2 x 4 1/2 x 3-inch loaf pans. Bake at 350° for one hour or until pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool on wire racks. Yields 2 loaves.
