Caramel pie



  • milk - 1/2 c
  • flour - 2 heaping
  • eggs, separated - 3 item
  • margarine - 4 Tbsp
  • baked 9-inch pie shell
  • sugar *

How to make caramel pie:

*To caramelize sugar, place 3/4 cup sugar in heavy iron skillet (smallest size). Stir over medium heat until sugar melts and begins to brown. Cook to desired color and remove from heat immediately.

Scald milk. Mix beaten egg yolks with warm milk on top of double boiler. Stir flour and 3/4 cup sugar together in small bowl and add to milk mixture. Place over hot water and cook until mixture begins to thicken. Stir constantly. Add caramelized sugar and stir until thick. Stir in margarine until melted; cool slightly and pour into prepared crust. Top with meringue made from reserved egg whites and brown in 350° oven for 12 to 15 minutes.
