  • brown sugar - 2 Tbsp
  • water - 6 c
  • dry mustard - 1/2 tsp
  • chili powder - 2 tsp
  • chopped green pepper - 1/2 c
  • oregano - 1/4 tsp
  • salt to taste - 1 item
  • cloves garlic, chopped - 2 item
  • large onion, chopped - 1 item
  • bay leaves - 2 item
  • canned tomatoes - 2 c
  • salt pork - 1/4 lb
  • pinto beans - 2 c

How to make buckaroo beans:

Wash beans; bring the 6 cups water to boiling. Add the washed beans and boil about 2 minutes. Cover; remove from heat and let stand one hour. This is equal to 10 to 12 hours soaking time in cold water.

Place large pan with soaked beans and soaking water over high heat. Add onion, garlic, bay leaves and salt pork. Slice through salt pork several times, almost to rind or cut in pieces. Bring to boiling point rapidly; reduce heat to simmer, cook with tight fitting lid and simmer for 1 1/2 hours. Add remaining ingredients, except salt. Bring to boiling point rapidly; reduce heat to simmer. Taste for salt; add it sparingly until it is just right. Cover and simmer for 2 more hours. There should be enough liquid left in beans to resemble a medium thick gravy. Usually beans cooked at this slow-simmer temperature will not stick to pan. Just to be on the safe side, you might gently stir beans at intervals.
