Buckaroo beans
Ingredients/Components
- brown sugar - 3 Tbsp
- dry mustard - 1 tsp
- chili powder - 3 Tbsp
- medium onion, diced - 1 item
- garlic cloves, minced - 2 item
- green pepper, diced - 1 item
- salt pork - 1/2 c
- can diced green chiles - 1 oz
- pinto beans - 1 lb
- medium tomatoes, diced - 2 item
- dry oregano - 1/4 tsp
How to make buckaroo beans:
Boil beans in 6 cups boiling water for 2 minutes. Let stand for 1 hour. Rinse twice. Add 3 1/2 cups fresh water and cook until tender. Add remaining ingredients and simmer for 1 1/2 hours uncovered. Serves 12.Recipe categories: Low protein, Side dish, Beans.
