Ingredients/Components
- salt and pepper - 1 item
- olive oil - 4 Tbsp
- scallions, minced - 4 item
- minced red bell pepper - 3 Tbsp
- lemon juice or white wine vinegar - 2 Tbsp
- pitted chopped black olives - 3 Tbsp
- bunch broccoli, blanched - 1 item
How to make broccoli salad:
Whisk together lemon juice and olive oil. Add olives, bell pepper, scallions, salt and pepper. Assemble room temperature broccoli back into a round shape in serving bowl. Pour dressing over the top. Makes 4 to 6 servings.Note: To blanch the broccoli, plunge florets into boiling water so they are slightly cooked but still crunchy.
