Broccoli cornbread
Ingredients/Components
- pkg - 1 1/2
- salt - 1 tsp
- stick margarine - 1 item
- onion, chopped - 1 item
- eggs, slightly beaten - 4 item
- small curd cottage cheese - 1 c
How to make broccoli cornbread:
Melt margarine and pour into eggs. Beat this and add cottage cheese. Add cornbread mix, broccoli and onion. Pour into greased skillet. Bake at 350° for 30 minutes or until done.If you wish, this can be baked in muffin tins sprayed with cookie spray for 15 to 20 minutes at 375°. Makes 12 muffins.
Freezes well. Thaw and heat.
