Breakfast potato pie
Ingredients/Components
- eggs - 5 item
- pkg - 1 oz
- salt - 1/2 tsp
- hot water - 1 qt
- paprika - 1 item
- pepper - 1/8 tsp
- cottage cheese - 1/2 c
- shredded Swiss cheese - 1 c
- slices bacon, cooked and crumbled - 6 item
- green onion, chopped - 1 item
- drops Tabasco - 4 item
How to make breakfast potato pie:
Cover hash browns with hot water; let stand 10 minutes. Drain well. Beat eggs. Add potatoes and remaining ingredients, except bacon and paprika. Pour into a well-greased 10-inch pie pan. Sprinkle with bacon and paprika. Cover and refrigerate at least 8 hours.Place cold pie pan, uncovered, in cold oven. Turn on oven and bake at 350° for 35 minutes or until potatoes are tender and eggs are done. Makes 6 to 8 servings.
