  • sugar - 3 c
  • cinnamon - 1 Tbsp
  • eggs - 4 item
  • salt - 1 tsp
  • flour - 5 c
  • nutmeg - 1 Tbsp
  • soda - 5 tsp
  • buttermilk - 1 qt
  • boiling water - 2 c
  • shortening - 1 c
  • ginger - 1 Tbsp
  • 40% bran flakes - 4 c
  • 100% bran - 2 c

How to make bran muffins:

Pour boiling water over 100% bran and cool. Cream sugar and shortening. Mix bran into eggs. Add flour, 40% bran flakes, soda, salt, buttermilk, nutmeg, ginger and cinnamon. Refrigerate up to 30 days. Bake in greased muffin tins 25 to 30 minutes at 375° to 400°.
