Blueberry-orange bread
Ingredients/Components
- sugar - 1 c
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- soda - 1/4 tsp
- baking powder - 1 tsp
- boiling water - 1/4 c
- egg - 1 item
- honey - 2 Tbsp
- orange juice - 1/2 c
- grated orange rind - 1 Tbsp
- flour plain - 2 c
- fresh blueberries - 1 c
How to make blueberry-orange bread:
Topping:1 tsp. grated orange rind2 Tbsp. orange juice2 Tbsp. honey Combine butter and boiling water in a small bowl. Add 1 tablespoon grated orange rind and 1/2 cup orange juice. Set aside.Beat egg and sugar until light and fluffy. Combine flour, baking powder, soda and salt; add to egg mixture, alternating with orange juice mixture, beginning and ending with flour. Fold in blueberries.
Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 minutes. Cool in pan for 10 minutes; remove to wire rack. Yields 1 loaf.
Topping: Combine orange rind, orange juice and honey; mix well. Spoon over hot bread.
