Blueberry muffins
Ingredients/Components
- sugar - 1/2 c
- milk - 3/4 c
- salt - 1/2 tsp
- flour - 2 c
- oil - 1/3 c
- baking powder - 3 tsp
- egg, beaten - 1 item
- fresh or frozen blueberries - 1 c
- grated lemon or orange peel - 1 tsp
How to make blueberry muffins:
Preheat oven to 400°. Grease bottoms only of 12 muffin cups or line with paper baking cups. In medium bowl, combine flour, sugar, baking powder, salt, lemon or orange peel. Mix well. In small bowl, combine milk, oil and egg; blend well. Add liquids to dry ingredients all at once. Stir just until dry ingredients are moistened. Fold in blueberries. Fill prepared muffin cups 2/3 full. Bake at 400° for 18 to 20 minutes or until lightly brown. Cool 1 minute before removing from pan. Serve warm.
