  • sugar
  • salt - 1/2 tsp
  • oil - 2/3 c
  • baking powder - 4 tsp
  • all-purpose flour - 1 c
  • quick cooking rolled oats
  • whole wheat flour - 2 c
  • fresh or frozen blueberries - 2 c
  • eggs, slightly beaten - 4 item
  • mashed bananas 4 bananas - 2 c

How to make blueberry banana bread:

Mix together flours, sugar, baking powder and salt. Stir in oats. Add oil, eggs, bananas and blueberries (if using frozen blueberries, do not thaw). Stir just until mixed. Pour batter into two oiled 9 x 5 x 3-inch loaf pans and bake at 350° for approximately 60 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes. Remove from pans. Wrap and refrigerate several hours before slicing. Yields 2 loaves, 16 slices each. Serving size: 1 slice.
