Ingredients/Components
- water - 3 c
- vegetable oil - 1 Tbsp
- all-purpose flour - 1/4 c
- pepper - 1/4 tsp
- chopped onion - 3/4 c
- salt optional - 1/2 tsp
- minced parsley - 2 Tbsp
- sliced carrots - 1 c
- finely chopped celery - 1/4 c
- cubed potatoes - 2 c
- finely chopped carrots - 1/2 c
- dried whole thyme - 1/8 tsp
- top boneless round steak - 1 lb
- each: chopped onion and peas - 1 c
How to make beef stew:
Trim fat from steak. Cut into 1-inch cubes. Combine flour and pepper. Dredge meat in flour mixture, reserving the excess. Cook meat, 3/4 cup onion and reserved flour mixture in oil in a Dutch oven over low heat until meat is lightly browned. Add water and next five ingredients. Cover, reduce heat and simmer 1 1/2 hours. Stir in potato, 1 cup carrot and 1 cup onion. Cover and simmer 20 minutes. Add peas and cook 10 minutes. Yields 6 cups. Preparation time is 2 hours.Note: Light version beef stew - beef stew minus all the fat.
