Beef enchiladas
Ingredients/Components
- sour cream - 1 c
- chili powder - 1 Tbsp
- ground beef - 1 lb
- shredded Cheddar cheese - 1 c
- oregano - 1/2 tsp
- medium onion, chopped - 1 item
- cumin - 1/2 tsp
- flour tortillas - 1 pkg
- small can green chilies - 1 item
- jars salsa - 2 item
- dash of parsley flakes - 1 item
How to make beef enchiladas:
In a large skillet, brown hamburger and drain. Add onion, green chilies, sour cream, Cheddar cheese, 1 jar salsa, chili powder, oregano, cumin and parsley flakes. Stir and let simmer 10 minutes. Spray a 9 x 13-inch pan with Pam. Dip tortillas in remaining jar of salsa and fill with 2 or 3 Tbsp. meat mixture. Roll up and place in pan. Take remaining mixture and place around the sides of pan. Pour salsa on top and sprinkle with shredded Cheddar cheese. Cover and bake at 350° for 30 minutes.If you like it hot, use hot salsa and add jalapenos!
