Ingredients/Components

  • salt - 1 tsp
  • flour - 1/4 1/2
  • butter - 1/3 c
  • pepper - 1/8 tsp
  • chopped parsley - 2 Tbsp
  • mushrooms - 2 lb
  • carrots, sliced - 4 item
  • bay leaves - 2 item
  • thyme - 1 tsp
  • brandy - 2 Tbsp
  • slices bacon - 6 item
  • garlic cloves, crushed - 2 item
  • cans beef consomme - 3 1/2
  • beef round or sirloin - 4 lb
  • approximately 14 white onions
  • Burgundy or cheap red wine

How to make beef burgundy:

Dice 6 slices of bacon; brown and remove from pan. Brown beef; cut in 4-inch strips. Put aside. Flame 2 tablespoons brandy. Saute garlic cloves, mushrooms and white onions.

In another skillet, brown the remaining ingredients. Add everything together and simmer 1 1/2 hours. Add more wine, if desired. Serve over rice or noodles.
