Ingredients/Components
- salt - 1/2 tsp
- water - 2 Tbsp
- oil - 3 Tbsp
- lemon juice - 2 Tbsp
- Dijon mustard - 1 Tbsp
- sliced zucchini - 1 c
- diced celery
- ground pepper - 1/4 tsp
- chopped red onion - 1/2 c
- roasted red pepper strips - 1/2 c
- can red kidney beans, rinsed and drained - 1 item
- cherry tomato halves
- can white kidney beans, rinsed and drained - 1 item
- chicory or escarole leaves - 6 c
- Combine remaining ingredients and arrange bean mixture
How to make bean salad:
On a large platter or individual dishes, arrange greens. Combine remaining ingredients and arrange bean mixture.
