Ingredients/Components
- pkg - 1 oz
- grated Parmesan cheese - 1/3 c
- red wine vinegar - 3 Tbsp
- Dijon mustard - 1 Tbsp
- olive oil - 1/3 c
- ground black pepper
- medium head escarole * - 1 item
How to make pasta salad:
*Important to use escarole as it will not wilt.Prepare ziti as label directs, using 1 tablespoon salt in water; drain and rinse with cold water to cool. Drain.
Cut salami, ham and Swiss cheese into 1/4-inch wide strips. Thinly slice escarole, discarding tough ribs.
In a large bowl, stir together olive oil, vinegar, mustard, pepper and 1 1/4 teaspoons salt until blended. Add ziti, salami, ham, Swiss cheese, escarole and Parmesan cheese; toss to coat. Makes 6 main dish servings. Excellent.
