  • flour - 1/4 c
  • cornstarch - 3/4 c
  • egg, slightly beaten - 1 item
  • water - 1/2 c
  • baking powder - 1 tsp
  • pepper - 1/4 tsp

How to make batter for fried vegetables:

In bowl, stir together first 5 ingredients. Add water and egg; stir until smooth. Dip cut up vegetables, such as zucchini, carrots, onion, mushrooms or boneless, skinless chicken breasts, cut into 1-inch cubes. Dip into mixture before placing vegetables or meat into hot oil. Makes a wonderful light and crispy fried vegetable.
