Ingredients/Components

  • eggs - 2 item
  • salt - 2 tsp
  • brown sugar - 1 c
  • oatmeal - 1 c
  • garlic powder - 1/2 tsp
  • pepper - 1/2 tsp
  • chopped onion - 1/2 c
  • chili powder - 2 tsp
  • catsup
  • can evaporated milk - 1 oz
  • cracker crumbs - 1 c
  • liquid smoke - 1/2 tsp
  • ground chuck - 3 lb

How to make barbecued meatballs:

Sauce:2 c. catsup1 c. brown sugar1/2 tsp. liquid smoke1/2 tsp. garlic powder1/4 c. chopped onion Combine all meatball ingredients and roll into walnut-size balls. (Keep hands moist with water.) Place meatballs in a single layer on wax paper lined cookie sheets; freeze until solid. Store frozen meatballs in freezer bag until ready to cook. Then use as many as needed at a time. Yields 80 meatballs.

Combine sauce ingredients and stir until sugar is dissolved. The ingredients listed are enough for 40 meatballs, so adjust to your size of family.

Place frozen meatballs in baking dish and pour on the sauce. Bake at 350° for 1 hour. This works great for preparing ahead or for the unexpected company.
