Banana waffles
Ingredients/Components
- milk
- salt - 1/4 tsp
- eggs, separated - 3 item
- baking powder - 3 tsp
- unsifted all-purpose flour - 2 c
- butter or margarine, melted - 3 tsp
- mashed ripe bananas - 1 c
- grated lemon rind optional - 1/2 tsp
- Apricot-Banana Sauce - 1 item
How to make banana waffles:
Mix flour, baking powder, lemon rind and salt in a large bowl. Beat egg yolks, milk, melted butter and mashed bananas together in a bowl. Add all at once to dry mixture; stir just enough to moisten. Beat egg whites until stiff but not dry; fold into batter. Let batter stand for 5 to 10 minutes to develop banana flavor. Bake in waffle iron according to manufacturer's directions.
