  • milk
  • salt - 1/4 tsp
  • eggs, separated - 3 item
  • baking powder - 3 tsp
  • unsifted all-purpose flour - 2 c
  • butter or margarine, melted - 3 tsp
  • mashed ripe bananas - 1 c
  • grated lemon rind optional - 1/2 tsp
  • Apricot-Banana Sauce - 1 item

How to make banana waffles:

Mix flour, baking powder, lemon rind and salt in a large bowl. Beat egg yolks, milk, melted butter and mashed bananas together in a bowl. Add all at once to dry mixture; stir just enough to moisten. Beat egg whites until stiff but not dry; fold into batter. Let batter stand for 5 to 10 minutes to develop banana flavor. Bake in waffle iron according to manufacturer's directions. Serve with Apricot-Banana Sauce. Yields 4 large waffles.
